With 15 years in culinary management and 8 years leading teams of 15 or more, The Mercenary Chef brings operational discipline to every plate. Mentored by AFC Award-Winning Certified Executive Chef Linda Volger and GM/Executive Chef John Dooley, he operates at a standard that most local vendors cannot match.

For catering events, we recommend booking at least 2–3 weeks in advance. For large events (100+ guests), 4–6 weeks is ideal. For gourmet vending bookings, 1–2 weeks notice is typically sufficient. Contact us to check availability for your date.
The Mercenary Chef is based in Baltimore and serves the greater Baltimore metropolitan area, including Baltimore County, Howard County, Anne Arundel County, and parts of Harford and Carroll Counties. Travel fees may apply for locations outside this area.
Absolutely. The Mercenary Chef has extensive experience accommodating vegetarian, vegan, gluten-free, halal, and allergen-specific dietary needs. All accommodations are discussed during your consultation and integrated into your custom menu.
Full-service includes menu consultation, food preparation, professional service staff, complete setup and breakdown, serving equipment, and day-of coordination. For the Chairman’s Table tier, it also includes custom plating, beverage pairing recommendations, and a pre-event tasting.
Teams are divided into cooking stations with guided instruction from The Mercenary Chef. Groups work together to prepare dishes, learning professional techniques while building communication and collaboration skills. Sessions typically run 2–3 hours and include eating what you create. Available for groups of 8 to 50.
Yes. A 50% deposit is required to secure your date, with the balance due 48 hours before the event. This ensures we can source the highest quality ingredients and dedicate the proper staffing to your event.
